    In ‘The Bear,’ Molly Gordon Is More Than the Girl Next Door

    A new addition to the cast for Season 2, the actress plays Chef Carmy’s love interest — “a human woman,” she said, “not just this sweet, sweet girl.”On a recent Monday afternoon, the actress Molly Gordon ambled through Manhattan’s SoHo neighborhood. Gordon, a wry and sprightly presence in movies like “Booksmart,” “Good Boys” and “Shiva Baby,” wore chunky sneakers, a schoolgirl skirt and sunglasses that made her look like a cat with an active Vogue subscription.Plenty of actresses on the come-up might have chosen a walk around these streets — and maybe a look-in at a few of the fashion flagships — as an afternoon activity. But Gordon, who stars in Season 2 of the FX series “The Bear,” which arrived last week on Hulu, had a less glamorous motivation. The stress of organizing a thriving acting career while also co-writing and co-directing her first feature, “Theater Camp,” which opens in theaters on July 14, had led her to grind her teeth. She was on her way to her dentist to be measured for a new night guard.“It’s amazing, it’s sexy, it’s all the things,” she said of the dental appliance. “This will not be my last mouth guard.”I had been told that Gordon, 27, was a woman of unusual personal charm. “Charming and disarming,” was how Jeremy Allen White, the star of “The Bear,” put it. And this was abundantly true. I had also heard her described as a girl-next-door type. This rang less true. Gordon has too much savvy for that, too much drive. She is more like the girl who knows exactly where you hide your spare key and can break into your house at will.In “The Bear,” she plays Claire, an emergency room resident and a love interest for White’s jittery chef, Carmy. When Season 1 landed last summer, Carmy became a social media pinup. (Italian beef, but pouty with it.) And yet early episodes of “The Bear” had deliberately avoided any suggestion of sex or romance. In this season, Claire offers both. (Mostly, not entirely: “I hope people don’t not like me. That’s all I can say.”) Claire mattered more. In her ambition and her candor and her warmth, Claire has felt closer to Gordon than any part she has played. It has made Gordon hungry for more.“She’s not the girl next door, because I don’t know what that is,” Gordon said. “I feel so grateful that I’m able to have this role where I get to be a human woman and not just this sweet, sweet girl.”A career on camera — and more recently, behind it — is Gordon’s birthright, more or less. The only child of the director Bryan Gordon and the writer and director Jessie Nelson, she grew up in Los Angeles, a precocious presence on her parents’ sets and at their dinner parties. She began acting as a toddler, participating in a neighborhood children’s studio, the Adderley School, where she met the actor Ben Platt.Platt, speaking by telephone, recalled those early performances. Props would malfunction. Costumes would come loose. But Gordon always pushed right through it, if a step or two behind the beat. She struggled in school, but theater was a place where she could shine, where she could play.Gordon had a few small parts in her parents’ projects, but otherwise she stuck to school and camp and community shows, intuiting that she could not yet handle the rejection that auditioning would bring. At 18, she enrolled at New York University. She dropped out two weeks later. “It was really expensive,” she explained. “And I couldn’t sit with how unhappy I was.”“She’s not the girl next door, because I don’t know what that is,” Gordon said of her character in “The Bear,” who indeed did grow up with Carmy.Amy Harrity for The New York TimesHaving found a small apartment, she took acting classes, secured representation and began to land the occasional television role. Eventually, a Gordon type emerged: poised young women who could also express some kindness, some vulnerability. She seems to have come by that poise honestly, though as Platt said, the offscreen Gordon is more self-effacing and silly and neurotic.“She often plays very cool characters,” Platt said. “She is a lot more funny and Jewish than that.”Christopher Storer, the creator of “The Bear,” had worked with Gordon on the Hulu series “Ramy” and immediately thought of her for Claire. Though Season 1 had assiduously ignored the personal lives of the restaurant workers, Storer and his fellow showrunner, Joanna Calo, wanted to see what would happen if Carmy attempted a relationship outside work.“We really wanted to get to what would it be like for Carmy to actually try to experience some form of happiness in his life,” he said.He and Calo decided on a character who had known Carmy for most of his life, someone who saw him for who he was and loved him anyway. On “Ramy,” Storer had found Gordon inherently lovable. “She’s so sweet,” he said. “And she’s so smart. And she’s funny as hell.” He knew she could lend all of that to Claire.Claire and Carmy meet again in the second episode, in the freezer aisle of a grocery, over a carton of veal stock. Claire looks at Carmy, and as a ballad by R.E.M. plays, that look seems to hold history and love and hunger. Carmy has armored himself against feeling, but opposite Gordon’s Claire that armor is useless.“She sees right through, in a really beautiful way, to the core of Carmy,” White said by phone.Ayo Edebiri, a star of both “The Bear” and “Theater Camp” and a longtime friend of Gordon’s, said that Gordon, for all her coolness and penchant for comedy, has a “deep well of emotion” that she can access. “There’s this deep reservoir of desire and feeling,” Edebiri said.But desire and feeling can’t sustain a relationship, especially if the man involved has a walk-in fridge’s worth of unresolved trauma to work through. For Gordon, the scenes opposite Carmy — the sweet, morning-after ones, the anguished ones — felt uniquely personal, mirroring her experiences with past partners. “I’ve been with men and we were so happy together,” she said. “But the happiness made them so angry and sad.”“I would love to lead a project, I would love to stretch myself,” Gordon said. “I can be naïve, I can be twisted, I can be dark.”Amy Harrity for The New York TimesAnd as someone who struggles with work-life balance — in the past year or so, Gordon has shot “The Bear,” shot and sold “Theater Camp” and tried to get a series pitch and a feature script greenlighted, which is to say that her balance skews all work — she has often asked herself the same questions the show forces Carmy to interrogate.“I get to explore things that are really near and dear to my heart,” she said. “Can we accept love? Can we have a work life and a romantic life?”For now, she isn’t sure of the answers.Gordon has never minded playing friends and girlfriends. If a girl next door is what’s required, she knows the address. But in her mid-20s, she has become more comfortable with her own ambition, scope and range.“I would love to lead a project, I would love to stretch myself,” she said just before she departed for her dental appointment. “I can be naïve, I can be twisted, I can be dark. I just haven’t always been given those opportunities.“I’m very grateful for what I have. But it doesn’t mean that I don’t want more.” More

    ‘The Bear’ Season 2 Puts a Little Optimism on the Menu

    With a gentler tone and reverence for hospitality, the Hulu show reaches beyond the chef to give other workers the spotlight.This article contains spoilers for the Hulu series “The Bear.”Even before the bump in Italian beef sandwich sales last year, you could sense an immediate, almost feverish enthusiasm for “The Bear.” You could measure it, not in actual views (Hulu doesn’t release streaming data), but in thirsty memes of Carmen (Carmy) Berzatto, the broken chef with a wavy jumble of unwashed hair and a startled, pink face that always seemed recently slapped.Carmy, played by Jeremy Allen White, is the tortured chef at the center of “The Bear,” determined to, though not always capable of, doing things differently.Chuck Hodes/FXCarmy, played by Jeremy Allen White, became the patron saint of obsessive chefs, their personal lives obliterated by a dedication to restaurant work. After his brother’s death, Carmy was determined to get his family’s ancient, grimy, lawless sandwich shop into shape while also, somehow, being a good guy — a dilemma he tackled between exploding toilets, fights, Al-Anon meetings and panic attacks.“I’m fine, really,” Carmy told his sister over the phone, “I just have trouble breathing sometimes and wake up screaming.”The breakout show’s portrayal of the anxiety and tension that rule restaurant kitchens was darkly realistic. And while the second season, which premiered Thursday on Hulu, doesn’t completely leave those pressures behind, it conveys an unexpected optimism about the restaurant industry and the people who make it run.The new season of “The Bear” follows its workers on their various adventures as the restaurant closes for renovations.Chuck Hodes/FXSeason 2 of “The Bear” swivels attention away from the chef and his trauma to spend time with other characters and, in the process, does something that TV and movies about restaurants hardly ever do: It subverts the power structure of the brigade system and invites more workers into the center of the story, where they belong.Though it never feels instructive or moralizing, there’s a sense of hopefulness as “The Bear” wrestles with larger themes of hospitality. Each member of the kitchen crew finds moments of joy and deep meaning in their work, whether they’re drawn to it by devotion or dysfunction (or a broken emulsion of both).In its second season, “The Bear” sends two of its characters on transformational internships, or stages, at other restaurants. In Copenhagen, he interns with a brilliant pastry chef played by Will Poulter.It doesn’t matter that recent reporting on the stage economy of Copenhagen, one of the world’s fine-dining capitals, has revealed a pattern of abuse and dangerous working conditions for unpaid interns. In “The Bear,” the stage is a dream: Marcus’s tasks are simply to learn from a skilled but kind and patient mentor, to get out and about and feel inspired, and to come up with some new dishes of his own.A stage at a fine-dining restaurant transforms Richie, played by Ebon Moss-Bachrach.Chuck Hodes/FXNo one was more suspicious of the fussy quirks of fine-dining kitchens than Richie, the fragile chaos machine played by Ebon Moss-Bachrach. But after a stage of his own in a Chicago fine-dining restaurant, Richie is completely transformed. He cares about organizing pens and polishing silverware. He wears suits now.In an arc that made me weep, Richie learns that he has the aptitude and composure for expediting, for being in the eye of the storm, for channeling all of his pettiness and intensity into fixing problems and making diners happy.There were flashbacks, in the first season of “The Bear,” of a toxic chef who trashed cooks on the line, telling them they’d be better off dead. But here the show seems keen to remind us that fine dining can work differently, and that wonderful people are still scattered throughout it.“The Bear” always blurred the lines between family and workplace in ways that felt both tender and menacing, and the most nightmarish kitchen scene takes place not in a professional kitchen, but at a Berzatto family Christmas at home a few years back, when Carmy’s brother Michael was still alive.Jamie Lee Curtis is devastating as their alcoholic mother who can’t get through cooking and serving a beautiful holiday dinner — an elaborate Feast of the Seven Fishes — without wringing guilt and shame from her children. Her inability to host offers a glimpse at what shaped the siblings and warped their relationships to cooking, but it’s also a razor-edged contrast to the cooks’ growing sense of hospitality as instinctual and deeply fulfilling.Sydney, played by Ayo Edebiri, is the enterprising stagiaire who quickly turned her internship into a serious job.Chuck Hodes/FXSydney (Ayo Edebiri) is crushed by her anxiety about the restaurant opening and herself as a leader. She worries about failure, but also about not having a financial stake in the business.Despite all of that, she’s delighted and re-energized after making a simple omelet for Carmy’s woozy, hungry sister, Natalie (Abby Elliott). She tops it with chives and crushed potato chips, plating it beautifully on a tray, as if she were carrying it to her own mother on a holiday morning. As she stands behind Natalie, watching her eat, Sydney looks happier than she’s been in ages.It’s a beautiful and agonizing scene that compounds the hospitality industry’s complications, and the ways a calling to it can both hurt and heal. Sure, Sydney deserves more than the pleasure of watching someone fill with happiness when they eat her food.     Joseph Zucchero, Whose Mr. Beef Sandwich Shop Inspired ‘The Bear,’ Dies at 69

    Mr. Beef, the Chicago restaurant Mr. Zucchero co-founded in the 1970s, specializes in the Italian beef, a classic American sandwich. The acclaimed FX series “The Bear” was partly filmed there.Joseph Zucchero, a co-founder of the popular sandwich shop that inspired the acclaimed FX restaurant drama “The Bear,” and was where much of the series was filmed, died on March 1 at a hospital in Chicago. He was 69.His death was confirmed by his son, Christopher Zucchero, an owner of Mr. Beef, the family’s restaurant in Chicago’s River North neighborhood, who said a cause was not known.The restaurant specializes in the Italian beef sandwich, a Chicago classic made with thin-sliced roast beef and giardiniera or roasted peppers. All of that is typically piled on a sandwich roll, and it is either drizzled with or dipped in beef juice.“He loved being there,” Joseph Zucchero’s son, Christopher, said of his father. “He was there day and night.”To create “The Bear,” a series about a young chef who leaves a career in New York’s high-end restaurant scene to run his family’s sandwich shop, FX shot inside and outside Mr. Beef, fictionalized as the Original Beef of Chicagoland in the show. It also created a replica of the restaurant’s kitchen in a Chicago studio, Mr. Zucchero’s son said.The series, which premiered on Hulu last summer, drew acclaim from food writers and restaurateurs. And in a fine example of life imitating art that imitated life, its success led to a nationwide surge in demand for the Italian beef sandwich, including at Mr. Beef itself.“Mr. Beef’s always going to be attached to that, and we’re very grateful for that,” Christopher Zucchero said of the TV series. “They’re together. It’s symbiotic for sure, but I don’t want it to overshadow what my dad did.”Joseph Zachary Zucchero was born on Feb. 21, 1954. He grew up on Chicago’s northwest side and started his career as a butcher, Christopher Zucchero said.In the late 1970s, Mr. Zucchero and his brother, Dominic, opened Mr. Beef on North Orleans Street in Chicago’s River North neighborhood, a once-gritty area that has since been heavily gentrified.On a visit to the restaurant in the mid-1990s, a New York Times reporter found customers eating $3.50 Italian beef sandwiches at a Formica countertop near an autographed picture of Frank Sinatra. The short menu posted above the grill was not really necessary, because virtually everyone ordered the same thing.“You want a hot dog, you go to a hot-dog stand,” Mr. Zucchero said. “You want a beef sandwich, you come here.”In addition to his son and his brother, Mr. Zucchero is survived by his wife, Camille; his daughter, Lauren; and his sister, Claudine Grippo.Mr. Beef on North Orleans Street in Chicago in October.Aaron M.     In 2022, TV Woke Up From the American Dream

    How the TV of 2022 depicted the weird, warping pressures of work and ambition in a boom-and-bust economy.In the Peacock series “Killing It,” Brock (Scott MacArthur), an Everglades snake hunter and would-be YouTube influencer, gets shot in the face in an altercation over a sack of python eggs. It is the best thing that has ever happened to him.The shooting leaves Brock minus one eye. But it’s captured on video, and the upload gets millions of views, giving him the lucrative viral success he’s wanted for years.“American dream!” he says, beaming. “Getting shot in the face!”On TV, 2022 has been the year of the American dream — with a catch. For many of the hustlers, entrepreneurs and strugglers onscreen, that aspiration still exists. But as Brock experienced, it can cost you an important part of yourself.“Killing It,” created by Dan Goor and Luke Del Tredici of “Brooklyn Nine-Nine,” slipped under many TV watchers’ radar last spring, including, mea culpa, mine. In its first episode, it seems like a simple, wacky buddy comedy: Craig Foster (Craig Robinson), a Florida security guard with dreams of starting a prostate-supplement business, teams up with the ride-share driver Jillian Glopp (Claudia O’Doherty) in a contest to exterminate invasive pythons.But as the season goes on, it becomes a broad, big-swinging satire of an adversarial economy that can seem to be booming and busting at the same time. (Tim Heidecker has a boisterous turn as a testosterone-pumped motivational speaker who preaches the philosophy of “Dominine,” which is one more than “dominate.”)As Craig, Jillian and their opponents claw toward their prize, one foot of dead python at a time, they give us a tour of the hustler’s mirage, in which the promise of riches shimmers on the horizon, all yours if you only go to one more paid conference, pitch two more investors, take three more jobs.The work experience of Jillian, an Australian immigrant, is especially bleak-comic. She drives an Uber that tows a mobile billboard (which doubles as her home), gets a TaskRabbit stint helping a rich woman (D’Arcy Carden) perpetrate a tax-fraud scheme and takes a job murdering birds at an airport, all with a heartbreakingly cheerful spirit of optimism.The comedy is grotesque and blunt — Craig spends one episode with a dead snake nailed to his palm — but sneakily smart. In this hunt for the American dream, it says, every life form must find a lower life form to kill. And while the series is set in 2016, three years before the first stirrings of Covid, it feels pandemic-adjacent in its focus on the stratum of the work force for whom work is risky, physical and in-person. You cannot drive an Uber, or shoot a nail gun into a python’s skull, over Zoom.Nicco Annan and Brandee Evans in “P-Valley,” in which every dancer dreams of being something else.StarzThe pandemic plays explicitly in Season 2 of Starz’s strip-club melodrama “P-Valley,” about a line of work that is defined by in-person interaction. The proprietor of the Pynk nightclub, Uncle Clifford (a resplendent Nicco Annan), who is nonbinary and uses she/her pronouns, spends much of the season sporting a bejeweled mask, enforcing 2020-era Covid protocols while trying to keep her business afloat at 50 percent capacity.The Pynk is a magnet for dreams, and not only naughty ones. The “P-Valley” creator, the playwright Katori Hall, respects her pole dancers as artists and athletes, and she recognizes their work for what it is: a job that manifests the economy tangibly, translating desire into dollar bills flying in the air.And because dancers age out so quickly, the job also renders the pressures of the economy in time-lapse: You have just a few years to rise up the pole before your tiring muscles pull you back down.Every dancer enters the Pynk with an eye on something else — a showbiz life, a business career, or simply escape — but one of the most affecting journeys of Season 2 belongs to Mercedes (Brandee Evans), who comes to realize that she has reached retirement age without having figured out her next step. “You’re just going to have to learn how to dream new dreams,” Uncle Clifford tells her. That’s the price of dreaming: You can’t afford to wake up.The summer’s surprise buzz phenomenon, FX on Hulu’s “The Bear,” focused on the pressures of a different sort of service industry. Carmy (Jeremy Allen White), a high-end restaurant chef, comes home to run his family’s struggling Chicago sandwich joint after his drug-addicted brother’s suicide. The pandemic isn’t a factor in the story. But the show’s depiction of work as a kind of barely restrained combat (which sometimes boils over into actual combat) feels like a bespoke fit for the post-reopening economy of labor shortages and supply chain issues.The memorable, high-decibel work sequences make “The Bear” look and sound like a war story that happens to take place in a kitchen. Work here is furious, violent and relentless. Flames roar up the sides of pans, pots clatter like artillery, slabs of beef are dragged and hoisted like casualties. Hands are burned, fingers slashed; the pace of the prep rush turns the kitchen staff into sweating, shouting bodies, meat cooking meat.All the while, Carmy flashes back to memories of being mocked and belittled by his Michelin-starred boss in the restaurant where he used to work. At times, you wonder why he chooses to stick with this job that often makes him so unhappy. In the season finale, reminiscing about his brother at an Al-Anon meeting, he seems to hit on an answer: Sometimes our dreams are not ours alone, nor are they even our choice. “Me trying to fix the restaurant was me trying to fix whatever was happening with my brother,” he says. “And, I don’t know, maybe fix the whole family.”Ayo Edebiri and Jeremy Allen White in “The Bear,” which depicts work as a kind of combat.FXIn politics, “the American dream” has long been used aspirationally, to evoke family and home. But as my colleague Jazmine Ulloa detailed earlier this year, the phrase has also lately been used ominously, especially by conservative politicians, to describe a certain way of life in danger of being stolen by outsiders.The typical counterargument, both in politics and pop culture, has been that immigrants pursuing their ambitions help to strengthen all of America. (The Dream Act has its name for a reason.) But some recent stories have complicated this idea by questioning whether the dream itself — or, at least, defining that dream in mostly material terms — can be toxic.The third season of Hulu’s “Ramy,” starring the comedian Ramy Youssef as a rudderless young Muslim from an immigrant family, takes on the theme directly. The title character’s parents, Maysa (Hiam Abbass) and Farouk (Amr Waked), have found prosperity tantalizingly out of reach, signing up with ride-share and grocery-delivery apps in their middle age.Maysa has grown resigned, but Farouk remains in a poignant unrequited love affair with the dream. He chases real-estate deals; he gins up a hapless business selling ad space on takeout containers; he fantasizes about appearing on “Shark Tank.” (Ramy, meanwhile, has hit it big in the jewelry business, having partnered with some contacts in Israel, but finds himself more spiritually adrift than ever.)In the season’s final episode, Maysa and Farouk, having come across a stash of hallucinogenic mushrooms, reminisce about their early days in the country when they would feed Ramy and his sister hot dogs, not knowing they contained pork. Stoned, they make a run to buy convenience-store franks, bite into the seductive, non-halal treats and realize that they taste disgusting. “Why did we sell our souls?” Farouk asks. “We gave it all up for hot dogs.”Most recently, Hulu’s “Welcome to Chippendales” — about another kind of commercialized American meat — reconsiders the immigrant dream from the vantage of success. The story of Somen Banerjee (Kumail Nanjiani), the founder of the male-stripper empire, it is in many ways of a piece with this year’s glut of scam-and-scandal docudramas; it’s a rise-and-fall series in which the fall is less interesting and takes twice as long. (The creator, Robert Siegel, gave us the prosthetic fantasia “Pam & Tommy” earlier this year.)The series stands apart, though, for showing how Banerjee, born in India, uses a learned idea of American appetites to pursue a received idea of the American dream. In some ways, being an outsider makes his success possible — much in America is novel to him, so he’s receptive to new ideas (like seminude dancers in bow ties).“Welcome to Chippendales” on Hulu is based on the real-life origins of the famous male-stripper empire.Erin Simkin/HuluBut his embrace of Americanness (for instance, he goes by “Steve” rather than “Somen”) cuts two ways. He experiences racism before and after he hits it big, but he also uses discrimination as a business tactic, ending up in court because of a scheme to bar Black patrons (whom, he concludes from experience, will make white customers see his club as less “classy”).Banerjee has perhaps internalized the American dream too thoroughly. He gets his first intimation of this when he returns to India for his father’s funeral, his suitcase stuffed with gifts of electronics and Velveeta, hoping to be welcomed as a conquering success. Instead, his mother scolds him for leaving the family printing business to run a fleshpot. “We are middle-class people, Somen,” she says. “We did not need saving by America.”He leaves, weighed down with rejection and processed cheese. Beyond his mother’s personal disappointment is the verdict that he has stopped being himself, but in the process he has not really become a new person either. He is simply a reflection of another culture’s artifice, an imitation of an imitation.This is the danger of the American dream when you scale it down from the national to the individual level. You risk devoting your life to wanting something because it’s what you’ve been told you should want. Everybody loves a Cinderella story, but sometimes your dream, in reality, is just a wish somebody else’s heart made. More

    Hulu’s ‘The Bear’ Fuels Demand for Chicago’s Italian Beef Sandwich

    The FX series has fueled a spike in sales of the sandwich at Chicago-specialty restaurants across the country.Last month, Dan Michaels, an owner of Gino’s East of Chicago in Los Angeles, watched as orders for Italian beef — the classic Chicago sandwich of thinly sliced roast beef and tangy giardiniera piled on a roll — suddenly soared to 300 a day, from 150 a day in June.“The Bear” had struck again.The cross-talking, anxiety-inducing series from FX about a struggling Chicago beef sandwich shop and its harried kitchen brigade has drawn acclaim from food media and restaurant veterans, propelled a slew of “Yes, Chef!” memes gushing over the lead actor, Jeremy Allen White, and energized a collective lust for sweaty line cooks.The show has also spurred instant demand for the delectably sloppy Italian beef sandwiches at the center of the plot’s chaos. (A “Late Night” intern snagged the last two sandwiches before the shop sold out for the day, Mr. Kerr said.)Goldbelly, an e-commerce company that delivers specialties like lobster rolls and gumbo from restaurants around the country, has seen a 30 percent increase in sales of Italian beef sandwiches since “The Bear” premiered, a spokeswoman for the company said. Joseph Zucchero, an owner who opened the shop in 1979, said he went from selling 250 to 300 Italian beefs per day pre-“Bear” to 800 daily in early July.“The week after it aired, all of a sudden, we were out of bread,” Mr. Zucchero said. Some days he keeps the shop open three to four hours past closing time to accommodate the line of customers.As for the show? “I haven’t seen it yet,” he said as a phone started to ring in the background. “I’m too busy.     How ‘The Bear’ Captures the Panic of Modern Work

    You don’t have to work in a kitchen to recognize the chaos and precarity the show depicts.The Original Beef of Chicagoland is the fitting name of the restaurant at the heart of the acclaimed FX series “The Bear,” which stars Jeremy Allen White as Carmy, a world-class chef who returns home to run his family’s sandwich shop after his older brother’s suicide. Of all American cities, Chicago is the one whose mythos is most closely associated with a particular kind of work: honest, meaty, broad-shouldered labor that forges you into something bigger, nobler. Like the city it’s set in, the restaurant in “The Bear” is an unpretentious place, humbly catering to “the working man.” But “the working man,” we soon learn — as a young, Black, female sous-chef mocks an older, white, male manager’s use of the label — is a contested term, especially in an environment where nobody does anything but work, and pretty much nobody has anything to show for it. It’s unclear, at first, why Carmy, once named one of Food & Wine’s “Best New Chefs,” has come back to the sandwich shop, but we’re gradually made to understand that he is returning, compulsively, to a traumatic site. Food was the thread that connected him to his brother, but his brother wouldn’t let him in the kitchen, and so off to Sonoma and New York he went, to make something of himself. The Original Beef of Chicagoland is also Carmy’s original beef — the core wound that ignited his ambition, the site of his connection to his family as well as his estrangement from it.The story of the prodigal son returning from some summit of achievement to his salt-of-the-earth hometown is a beloved American narrative, most often seen in Christmas movies about frazzled executives returning to their roots. They are intended to reify the comforting notion that work isn’t everything — that the real America is slow, simple, cozy and (above all) fair, a place that rewards you for your efforts, full of wise, avuncular coots and simple, patient girls who’ve been waiting all along. But when Carmy returns to Chicago, he finds his elders are either absent or trying to exploit him, and the only girl who’s interested in his feelings is his sister. Just as success failed to save him, honest work won’t either; it won’t even generate enough money to get by. The Original Beef may signal noble, can-do labor, but it’s also a decompensating system on the verge of structural collapse. A few episodes in, the toilet explodes, unleashing a geyser in Carmy’s face. An industrial mixer blows a fuse, knocking out the power. The gas goes out, forcing the kitchen staff to build makeshift grills outside. They have no choice; one missed lunch service could take them out. A 1980s arcade game called Ball Breaker blares stupidly, violently from one corner, handily summarizing the experience. “Your balls have been broken!!” its screen announces. “Continue?”“The Bear” has been praised for its visceral depiction of the stress of a professional kitchen, but you don’t have to have done restaurant work to recognize the chaos, panic and precarity the show captures so convincingly. In “The Bear,” work is a dumb, sadistic game that has left Carmy with unchecked PTSD. Intrusive thoughts and flashbacks fracture his consciousness; he even cooks in his sleep, almost setting his house on fire. Richie, the restaurant’s manager, takes Xanax because he suffers from “anxiety and dread.” (“Who doesn’t?” Carmy snaps.) Sydney, the sous-chef, has a cabinet stuffed with medication for heartburn and ulcers, problems that may have been sparked by a failed attempt to run her own business. (“It was the first time I didn’t have a complete and utter psychopath behind me screaming,” she says. “And I thought I wanted that, you know? But look where that got me.”) The restaurant is drowning in bills. When the characters aren’t yelling at one another at top volume, they’re often shutting down to cope with all the yelling. Their customers are like kids stuck in a car with warring parents. The word you see most frequently in writing about the show is “stressful,” but it’s often accompanied by descriptions of the workplace as “soul-crushing,” “toxic” or “abusive.” All this is intended as praise — the idea is that, despite its occasional excesses, the show has captured something relatable and true.Hustle has always been romanticized in American culture, which promises that nobly sacrificing yourself on the altar of endless work will pay off in the end. But it’s increasingly clear that for most people, it won’t. Twenty-two years ago, when Anthony Bourdain published “Kitchen Confidential,” he glamorized the kitchen as a kind of foxhole, populated by wild, dysfunctional hard-asses yelling profanities at one another while managing to crank out hundreds of plates every night. This may once have seemed exotic or picturesque, but that pressure-cooker environment has come to feel familiar to more and more workers in more and more industries. The American economy soared over the past decade, but life for most became harder: “In one of the best decades the American economy has ever recorded, families were bled dry by landlords, hospital administrators, university bursars and child-care centers,” Annie Lowrey wrote in The Atlantic in 2020. “For millions, a roaring economy felt precarious or downright terrible.” “The Bear” is compelling not because of how it recreates a kitchen but because it captures something about modern work in general.‘The Bear’ is compelling not because of how it recreates a kitchen but because it captures something about modern work in general.Carmy and Sydney work insane hours, rising at dawn and waiting for L trains on dark platforms, too exhausted to think about anything else. At times it seems as if work is how they escape from having to think about what is happening to them. Sydney tells someone her goal is simply to do her job and live her life, but it’s abundantly clear that, outside her job, she has little life to speak of. These conditions don’t spur creativity; on the contrary, they’re counterproductive. Carmy can’t spare time to listen to Sydney’s ideas about the dinner menu or encourage the pastry chef’s experiments with doughnuts. Exploring your talent, in this environment, might turn out to be another luxury the “working man” can’t afford, something that belongs exclusively to narcissists with financial backing. This inequality comes into focus early in the show: We see Carmy abused by an arrogant chef and, in Chicago, paid a visit by his mobster uncle, who talks down the restaurant — the place is unfixable, he says — before trying to buy it for himself. Carmy is furious to learn that Richie has been dealing cocaine in the alley behind the restaurant to keep it afloat, but Richie justifies his actions by co-opting the language of entrepreneurship, crediting this side hustle with getting the place through Covid. “That’s the kind of stick-to-it-iveness and ingenuity and out-of-the-box thinking that we look for in employees,” he says. “But that ship has sailed, my friend.” This is the startling milieu and message of “The Bear,” the thing that has struck a chord. The notion that hustle will eventually pay off is an insidious pipe dream. Everyone is in survival mode all the time. The system has failed. The place is unfixable.
